Gobi Manchurian is the ultimate Indo-Chinese appetizer! Crispy cauliflower florets tossed in a tangy, spicy sauce - this restaurant-style recipe is easier than you think. Perfect for parties, snacks, or as a side dish with fried rice.

Ingredients

For the Cauliflower Coating:

  • 1 medium cauliflower (cut into medium florets)
  • 1/2 cup all-purpose flour (maida)
  • 1/4 cup cornflour
  • 1 tsp ginger-garlic paste

  • Salt to taste
  • Water as needed

For the Manchurian Sauce:

  • 2 tbsp oil
  • 1 tbsp ginger (finely chopped)
  • 1 tbsp garlic (finely chopped)
  • 2-3 green chilies (slit)
  • 1 large onion (cubed)
  • 1 capsicum (cubed)
  • 2 tbsp soy sauce
  • 1 tbsp tomato ketchup
  • 1 tbsp chili sauce
  • 1 tsp vinegar
  • 1 tsp sugar
  • 1 cup water
  • 2 tbsp cornflour (mixed with 3 tbsp water)
  • Spring onions for garnish
  • Salt to taste

Step-by-Step Instructions

Step 1: Prepare the Cauliflower

Cut cauliflower into medium-sized florets. Blanch in boiling salted water for 2 minutes, then drain and pat dry completely. This ensures crispy coating!

Step 2: Make the Batter

In a bowl, mix all-purpose flour, cornflour, ginger-garlic paste, Phoran Turmeric Powder, red chili powder, black pepper, and salt. Add water gradually to make a thick batter (coating consistency). The turmeric adds beautiful color and health benefits!

Step 3: Coat and Fry

Heat oil for deep frying (medium-high heat). Dip each cauliflower floret in batter, coating evenly. Fry in batches until golden and crispy (4-5 minutes per batch). Don't overcrowd the pan! Drain on paper towels.

Step 4: Make the Sauce

Heat 2 tbsp oil in a wok or large pan on high heat. Add chopped ginger, garlic, and green chilies. Stir-fry for 30 seconds until fragrant. Add cubed onions and capsicum. Stir-fry on high heat for 2 minutes (vegetables should remain crunchy).

Step 5: Add Sauces

Add soy sauce, tomato ketchup, chili sauce, vinegar, sugar, and salt. Mix well. Add 1 cup water and bring to a boil.

Step 6: Thicken the Sauce

Add cornflour slurry and stir continuously. The sauce will thicken in 1-2 minutes. It should be glossy and coat the back of a spoon.

Step 7: Toss and Serve

Add fried cauliflower florets to the sauce. Toss gently to coat evenly. Cook for 1 minute. Garnish with chopped spring onions. Serve immediately while hot and crispy!
