Goa's Portuguese Legacy: Vindaloo

Method:

1. Marinate meat with turmeric, red chili powder, and vinegar for 2 hours.

2. Heat coconut oil, add whole spices and onions.

3. Add ginger-garlic paste, Garam Masala, and Tandoori Masala.

4. Add marinated meat and cook until browned.

5. Add jaggery and remaining vinegar.

6. Simmer until meat is tender and sauce is thick.

7. Serve hot with rice or Goan bread.
