Royal Kesar Peda for Diwali Celebrations

Kesar Peda is a luxurious Indian sweet that combines the richness of milk with the royal flavors of saffron and cardamom. This melt-in-mouth delicacy is perfect for Diwali gifting and celebrations!

Ingredients

  • 2 cups full-fat milk powder
  • 1 cup condensed milk
  • 1/4 cup milk
  • 3 tbsp ghee
  • A generous pinch of saffron strands
  • 6-8 Phoran Premium Green Cardamom pods, powdered
  • 2 tbsp warm milk (for saffron)
  • Chopped pistachios and almonds for garnish

Instructions

Step 1: Prepare Saffron Milk

Soak saffron strands in 2 tbsp warm milk for 10 minutes. The milk will turn golden yellow with a beautiful aroma.

Step 2: Make the Peda Mixture

In a heavy-bottomed pan, heat ghee on medium flame. Add milk powder and roast for 2-3 minutes until aromatic. Add condensed milk and regular milk, stirring continuously to avoid lumps.

Step 3: Add Flavors

Add the saffron milk and powdered Phoran Green Cardamom. Mix well and cook for 5-7 minutes until the mixture thickens and starts leaving the sides of the pan.

Step 4: Shape the Pedas

Transfer to a greased plate and let it cool until you can handle it. Grease your palms with ghee and shape into small round pedas. Press gently to flatten slightly.

Step 5: Garnish and Set

Garnish each peda with a pistachio or almond sliver. Let them set for 2-3 hours at room temperature or 30 minutes in the refrigerator.

Chef's Tips

  • Don't overcook the mixture or pedas will become hard
  • The mixture should be soft and pliable when shaping
  • Store in an airtight container for up to 5 days
