Creamy Diwali Kheer - A Traditional Favorite
Kheer is the quintessential Indian rice pudding that graces every festive occasion. This creamy, aromatic dessert flavored with cardamom and cloves is a Diwali must-have!
Ingredients
- 1/2 cup basmati rice
- 1 liter full-fat milk
- 1/2 cup sugar (adjust to taste)
- 8-10 Phoran Premium Green Cardamom pods
- 4-5 Phoran Premium Cloves
- A pinch of saffron strands
- 2 tbsp chopped almonds and pistachios
- 2 tbsp raisins
- 1 tbsp ghee
Instructions
Step 1: Prepare the Rice
Wash and soak rice for 20 minutes. Drain and set aside.
Step 2: Boil the Milk
In a heavy-bottomed pan, bring milk to a boil. Add the soaked rice, Phoran Green Cardamom pods (lightly crushed), and Phoran Cloves.
Step 3: Simmer and Stir
Reduce heat to low and simmer for 30-40 minutes, stirring occasionally to prevent sticking. The rice should be completely cooked and milk should reduce by half.
Step 4: Add Sugar and Saffron
Add sugar and saffron strands. Stir well and cook for another 5 minutes until sugar dissolves completely.
Step 5: Roast Dry Fruits
In a small pan, heat ghee and roast almonds, pistachios, and raisins until golden. Add to the kheer.
Step 6: Serve
Kheer can be served warm or chilled. Garnish with extra nuts and a few strands of saffron.

- For thicker kheer, cook longer; for thinner consistency, add more milk
