For Vada:
- 4 large potatoes, boiled and mashed
- 1 tsp Phoran Premium Garam Masala
- 2 green chilies, chopped
- 1 tbsp ginger, chopped
- 1 tsp mustard seeds
- Curry leaves
- 2 tbsp oil
- Salt to taste
For Batter:
- 1 cup gram flour (besan)
- 1/2 tsp turmeric
- 1/2 tsp Phoran Premium Garam Masala
- Salt to taste
- Water as needed
For Assembly:
- 8 pav buns
- Green chutney
- Tamarind chutney
- Dry garlic chutney
- Fried green chilies
Method:
1. Heat oil, add mustard seeds and curry leaves.
2. Add ginger, green chilies, and mashed potatoes.
3. Add Garam Masala and mix well. Cool completely.
4. Make smooth batter with gram flour, turmeric, and Garam Masala.
5. Shape potato mixture into balls, dip in batter, and deep fry.
6. Slit pav, apply chutneys, place vada, and serve with fried chilies.
