Coastal Refresher: Konkani Sol Kadhi

Beat the heat with this refreshing Konkani Sol Kadhi enhanced with a unique Phoran Premium Garam Masala tempering. This pink-colored coconut milk drink is a cooling digestive from the Konkan coast.

Ingredients:

  • 1 cup thick coconut milk
  • 8-10 kokum petals
  • 1/2 tsp Phoran Premium Garam Masala
  • 2 green chilies, chopped
  • 1 inch ginger, grated
  • 1 tbsp coconut oil
  • 1/2 tsp mustard seeds
  • Curry leaves
  • Salt to taste
  • Fresh coriander

Method:

1. Soak kokum in warm water for 30 minutes.

2. Extract kokum water and discard the petals.

3. Mix coconut milk with kokum water.

4. Add ginger, green chilies, and salt.

5. For tempering: Heat coconut oil, add mustard seeds.

6. Add curry leaves and Phoran Garam Masala.

7. Pour tempering over the kadhi.

8. Garnish with coriander and serve chilled.
