God's Own Country Delicacy: Kerala Appam

Experience the divine flavors of Kerala with soft, fluffy appam paired with a aromatic stew enhanced with our Phoran Premium Garam Masala. This fermented rice pancake represents the essence of Kerala's Syrian Christian cuisine.

For Appam:

  • 2 cups raw rice
  • 1/2 cup cooked rice
  • 1/2 cup coconut milk
  • 1 tsp active dry yeast
  • 1 tsp sugar
  • Salt to taste

For Vegetable Stew:

  • 2 cups mixed vegetables (carrot, beans, potato)
  • 1 tsp Phoran Premium Garam Masala
  • 1 cup thick coconut milk
  • 2 tbsp coconut oil
  • 1 onion, sliced
  • 2 green chilies
  • Curry leaves
  • Ginger, chopped

Method:

Appam: Soak rice for 4 hours. Grind with coconut milk. Add yeast mixture and ferment overnight. Cook in appam pan until edges are crispy and center is soft.

Stew: Heat coconut oil, sauté onions, ginger, and green chilies. Add vegetables and Phoran Garam Masala. Pour coconut milk and simmer until vegetables are tender.
