Desert Delicacy: Rajasthani Gatte Ki Sabzi

For Gatte:

  • 2 cups gram flour (besan)
  • 1 tsp Phoran Premium Garam Masala
  • 1 tsp red chili powder
  • 1/2 tsp turmeric
  • 1 tsp ajwain
  • 2 tbsp oil
  • Salt to taste

For Curry:

  • 2 tbsp ghee
  • 1 tsp cumin seeds

  • 2 cups buttermilk
  • 1 tbsp ginger-garlic paste
  • 2 green chilies
  • Coriander leaves

Method:

1. Mix gram flour with spices, oil, and water to make firm dough.

2. Make cylindrical rolls and boil in salted water for 15 minutes.

3. Cool and cut into pieces.

4. Heat ghee, add cumin seeds and Garam Masala.

5. Add ginger-garlic paste and green chilies.

6. Add buttermilk gradually, whisking continuously.

7. Add gatte pieces and simmer for 15 minutes.

8. Garnish with coriander and serve with roti.
