Tripura's Fermented Delight: Mui Borok

Ingredients:
- 500g small fish (or dried fish)
- 1 tsp Phoran Premium Garam Masala
- 2 cups mixed vegetables (pumpkin, brinjal)
- 2 tbsp fermented fish paste
- 4-5 green chilies
- 1 tbsp ginger, chopped
- 2 tbsp mustard oil
- 1 onion, sliced
- Bamboo shoots (optional)
- Salt to taste
Method:
1. Clean and marinate fish with turmeric and salt.
2. Heat mustard oil, lightly fry fish and set aside.
3. In the same oil, sauté onions until soft.
4. Add ginger, green chilies, and fermented fish paste.
5. Add vegetables and Phoran Garam Masala.
6. Add water and simmer until vegetables are tender.
7. Add fried fish and cook for 5 more minutes.
8. Serve hot with rice.
