What's Really in Your Spice Packet?
Pick up any mass-market spice packet from a supermarket and flip it over. Alongside the spice name, you'll often find a list of ingredients that includes things like silicon dioxide, sodium aluminosilicate, tartrazine, or modified starch. These are additives — and they're more common in packaged Indian spices than most people realise.
This guide is specifically about additives — synthetic substances added during processing and packaging. It's different from adulteration (adding cheaper substances to bulk up a spice) and different from origin or processing quality. The FSSAI Regulatory Context
The Food Safety and Standards Authority of India (FSSAI) permits certain additives in spices under the Food Safety and Standards (Food Products Standards and Food Additives) Regulations. Permitted additives include specific anti-caking agents, colours, and preservatives — but only within defined limits and only those on the approved list.
The problem: permitted does not mean desirable. FSSAI sets safety thresholds, not quality standards. A spice can be fully FSSAI-compliant and still contain additives that dilute flavour, mask poor quality, or accumulate in the body with daily use. Compliance is the floor, not the ceiling.
The 4 Categories of Additives in Indian Spices
1. Anti-Caking Agents — The Most Common
The most widespread additive in ground spices. Anti-caking agents prevent powder from clumping during storage and transport. Common ones include:
- Silicon Dioxide (E551): A synthetic silica. Generally considered safe, but dilutes the spice and indicates large-batch, long-storage production.
- Sodium Aluminosilicate (E554): An aluminium-based compound. Some research raises concerns about aluminium accumulation with regular consumption, particularly for people with kidney issues.
- Calcium Silicate (E552): Another silica-based agent, less common than E551.
Why brands add them: Large-batch grinding + long supply chains = clumping. Fresh, small-batch spices with fast turnover don't need anti-caking agents — they're used before they have a chance to clump. If a brand uses anti-caking agents, it's a signal of their production model, not just their ingredient list.
2. Artificial Colours — The Quality Maskers
Some spice blends — particularly chilli powder, turmeric, and masala blends — have artificial colours added to make them look more vibrant than they actually are:
- Tartrazine (E102): A yellow azo dye. Linked to hyperactivity in children in some studies; banned in some countries for use in food.
- Sunset Yellow (E110): An orange-yellow dye used to enhance colour in chilli and masala powders.
- Sudan Red: An industrial dye (not food-grade) that has been found in chilli powder in FSSAI enforcement actions. A known carcinogen — its presence is illegal but has been documented in market samples.

3. Fillers and Extenders
Used to increase volume and reduce cost. Common in blended masalas where the filler is hidden among multiple ingredients:
- Starch (corn, wheat, rice): Bulks up the blend, dilutes potency. Relevant for people with gluten sensitivity if wheat starch is used.
- Salt: Sometimes added to masala blends in excess of what the recipe requires, effectively making the blend saltier and cheaper per gram.
- Flour: Documented in some market samples of cumin and coriander powder.
4. Preservatives
Less common in dry spices (which are naturally shelf-stable when properly dried) but found in spice pastes and wet masalas. Look for sodium benzoate, potassium sorbate, or sulphur dioxide on labels of wet products.
How to Identify Additive-Free Spices — 5 Practical Tests
- Read the ingredient list: A pure spice should list only the spice itself. A pure Garam Masala should list only the spices in the blend. Any E-number, “permitted anti-caking agent”, “added colour”, or “starch” means additives are present.
- Water test for artificial colour: Dissolve ½ tsp of chilli powder or turmeric in a glass of water. Natural colour dissolves slowly and unevenly. Artificial dyes bleed immediately into the water, turning it uniformly bright.
- Check the colour consistency: Artificially coloured spices look unnaturally uniform and bright. Genuine spices have natural variation — turmeric ranges from pale gold to deep amber, chilli from brick red to deep maroon.
- Smell test: Fresh, additive-free spices have a strong, immediate aroma when opened. Faint, flat, or chemical smell indicates old stock or additives masking poor quality.
- Check for powder at the bottom: Excessive fine powder in a packet of whole spices indicates old, brittle stock. Anti-caking agents in ground spices make them feel unnaturally dry and free-flowing — fresh ground spice has a slightly denser, more cohesive texture.
Why Additive-Free Matters for Daily Cooking
The average Indian household uses spices twice a day, every day. Over a year, that's 700+ exposures to whatever is in your spice packet. For most people, the occasional anti-caking agent is not a health crisis. But the cumulative effect matters for:
- Children: Tartrazine and other azo dyes have documented links to hyperactivity and behavioural effects in children.
- People with allergies: Wheat starch fillers are a hidden gluten source. Aluminium-based anti-caking agents are a concern for people with kidney conditions.
- Pregnant women: Minimising synthetic additive exposure is a reasonable precaution during pregnancy.
- Flavour: Anti-caking agents dilute the spice. Artificial colours mask poor quality. Fillers reduce potency. An additive-free spice simply tastes more like itself.

Brands that are genuinely additive-free will prominently state it because it's a differentiator they're proud of.
Do anti-caking agents affect the flavour of spices?
Yes — anti-caking agents dilute the spice by adding inert material to the powder. They also indicate that the spice was ground in large batches and stored for extended periods before reaching you — which means the volatile aromatic compounds have had more time to degrade. The absence of anti-caking agents is both a purity indicator and a freshness indicator.
What's the difference between additive-free and organic spices?
Organic certification addresses pesticide use during cultivation — it does not regulate what's added during processing and packaging. An organic spice can legally contain FSSAI-permitted additives. Additive-free addresses what's added post-harvest. Both matter, but they address different stages of the supply chain.
