Baked feta pasta was the recipe that made everyone a home cook in 2021 — and it's still going strong. Cherry tomatoes, a block of feta, olive oil, roast everything together, toss with pasta. Simple, stunning, delicious.
Now imagine that same dish with Kashmiri chilli roasted into the tomatoes, cumin-spiced olive oil, and a finishing dusting of chaat masala. That's the Phoran version. And it's better.

The Phoran Baked Feta Pasta Recipe
Ingredients (serves 3–4):
- 200g block of feta cheese
- 400g cherry tomatoes
- 5 tbsp good olive oil
- 1 tsp buy Phoran Kashmiri Red Chilli Powder online India
- 1 tsp buy Phoran Coriander Powder online India
- 1/2 tsp buy Phoran Cumin Seeds online India, lightly crushed
- 1/4 tsp buy Phoran Garam Masala online India
- 4 cloves garlic, whole
- 300g pasta (rigatoni or penne work best)
- 1/2 tsp buy Phoran Chaat Masala online India to finish
- Fresh coriander or basil, salt to taste
Method:
- Preheat oven to 200°C.
- Place cherry tomatoes and garlic in a baking dish. Drizzle with 4 tbsp olive oil. Sprinkle with Kashmiri chilli, coriander powder, and crushed cumin seeds. Season with salt. Toss to coat.
- Place the feta block in the centre of the tomatoes. Drizzle with remaining olive oil and dust lightly with garam masala.
- Roast for 30–35 minutes until tomatoes are blistered and feta is golden at the edges.
- Meanwhile, cook pasta in well-salted water until al dente. Reserve 1/2 cup pasta water.
- Remove baking dish from oven. Crush the feta and tomatoes together with a fork into a rough sauce.
- Add pasta and toss to combine. Add pasta water as needed to loosen the sauce.
- Finish with a dusting of Phoran Chaat Masala and fresh coriander. Serve immediately.
Why the Spices Transform This Dish
Kashmiri chilli roasted into the tomatoes adds a smoky, fruity heat that deepens as it cooks — far more complex than chilli flakes. Cumin seeds bloom in the olive oil during roasting, infusing the entire dish with a warm, earthy base note. The chaat masala finish adds the tangy brightness that cuts through the richness of the feta. This isn't fusion for the sake of it — every spice has a job.
