Authentic Hyderabadi Chicken Biryani Recipe

Ingredients
- 500g chicken, bone-in pieces

Method
Step 1 – Marinate the Chicken
Mix chicken with yogurt, Phoran Biryani Masala, half the fried onions, salt, and 1 tbsp oil. Marinate for at least 30 minutes (overnight for best results).
Step 2 – Parboil the Rice
Boil water with whole spices and salt. Add soaked rice and cook until 70% done (grains should still have a bite). Drain and set aside.
Step 3 – Layer the Biryani
In a heavy-bottomed pot, heat 1 tbsp ghee and spread the marinated chicken at the bottom. Layer parboiled rice on top. Drizzle saffron milk, remaining ghee, fried onions, mint, and coriander over the rice.
Step 4 – Dum Cook
Seal the pot with a tight lid (or dough). Cook on high flame for 5 minutes, then reduce to the lowest flame for 25–30 minutes. Rest for 10 minutes before opening.
Step 5 – Serve
Gently mix from the bottom and serve hot with raita and salan. The aroma alone will bring everyone to the table.
Lucknowi (Awadhi) Biryani Variation
For a Lucknowi-style biryani, cook the chicken separately in a rich gravy (yakhni) before layering with rice. Use the same Phoran Biryani Masala but add a pinch of ittar (food-grade rose water) to the saffron milk for the signature Awadhi fragrance.
