Fries Just Got a Desi Upgrade
Loaded fries are everywhere — on every Gen Z food account, every cloud kitchen menu, every late-night delivery order. But the versions that are going truly viral? They're the ones with bold, complex toppings that go way beyond cheese and jalapeños.
Enter: chaat-style loaded fries. Crispy fries buried under tamarind chutney, green chutney, whipped yoghurt, sev, and a generous dusting of Phoran Chaat Masala. This is the loaded fry that actually has flavour depth.
A Note from Our Founder
"Chaat has always been India's answer to the world's craving for something tangy, spicy, crunchy, and creamy all at once. When I see loaded fries trending globally, I think — we invented this. Papdi chaat, aloo tikki, bhel puri. The West is just catching up. Our job at Phoran is to give people the spices to do it right at home." — Founder, Phoran Masala
What You Need
- 500g thick-cut fries (air-fried or oven-baked)
- 3 tbsp tamarind chutney
- 3 tbsp green coriander chutney
- 4 tbsp whisked yoghurt, seasoned with salt and a pinch of cumin
- 1 tsp Phoran Chaat Masala — the non-negotiable
- 1/2 tsp Phoran Kashmiri Red Chilli Powder
- Handful of fine sev
- Pomegranate seeds (optional but highly recommended)
- Fresh coriander, chopped
How to Build the Perfect Chaat Fry
- Cook your fries until extra crispy — soggy fries won't survive the toppings.
- Spread on a wide plate or tray. Don't pile them in a bowl.
- Drizzle tamarind chutney generously, then green chutney in a zigzag.
- Spoon over the seasoned yoghurt in dollops.
- Dust with Phoran Chaat Masala and Kashmiri chilli powder.
- Finish with sev, pomegranate seeds, and fresh coriander.
- Serve immediately — chaat waits for no one.
Why Chaat Masala is the Secret Weapon
Phoran Chaat Masala contains amchur (dried mango powder), black salt, cumin, and a proprietary blend of aromatics that create that signature tangy-savoury punch. It's the spice that makes everything taste like it came from a street cart in Chandni Chowk.
The Gen Z Factor
This dish photographs beautifully, comes together in under 10 minutes, and hits every flavour note — tangy, spicy, creamy, crunchy. It's built for content. Make it, film it, share it.
