When Bonfires Light Up Assam
Magh Bihu, also known as Bhogali Bihu, is Assam's most celebrated harvest festival. Observed in mid-January, it marks the end of the harvesting season and the beginning of the month of Magh. The night before Bihu — called Uruka — is a time of community feasting around bonfires called meji, where families and friends gather to cook, eat, and celebrate together.
At Phoran, we believe every feast deserves the finest spices. Explore our Ground Spices & Masala Blends to bring Assam's warmth to your kitchen.
The Flavours of Magh Bihu
Assamese festive food is a beautiful blend of earthy, sweet, and aromatic flavours:
- Til Pitha — rice cakes stuffed with sesame and jaggery, fragrant with Green Cardamom (Elaichi)
- Narikolor Ladoo — coconut sweets spiced with cardamom and ginger
- Masor Tenga — tangy fish curry with mustard and tomato
- Duck Curry — slow-cooked with black pepper, ginger, and aromatic whole spices
Essential Spices for Bihu Cooking
Assamese cuisine relies on a handful of powerful spices that define its unique character:
- Green Cardamom — the soul of Assamese sweets and desserts
- Whole Cloves (Laung) — for depth in meat curries and rice dishes
- Black Pepper (Kali Mirch) — essential for Assam's bold meat preparations
