Overnight oats became Gen Z’s favourite meal-prep breakfast — no cooking, endlessly customisable, high in fibre, and ready when you wake up. But most versions are bland. Vanilla, berries, honey. Fine. Forgettable.

Masala chai overnight oats are none of those things. Warm spices bloomed into oat milk overnight, topped with caramelised banana, crushed nuts, and a drizzle of honey. This is the breakfast that makes you want to wake up.

The Phoran Masala Chai Overnight Oats Recipe

Ingredients (1 serving):

  • 1/2 cup rolled oats
  • 3/4 cup oat milk or full-fat milk
  • 1 tbsp chia seeds
  • 1 tbsp honey or maple syrup
  • 1/4 tsp buy Phoran Green Cardamom online India, freshly ground
  • 1/4 tsp ground cinnamon
  • 1/8 tsp ground ginger (or 1/2 tsp fresh grated ginger)
  • Pinch of black pepper — just a pinch, it’s the chai secret
  • Pinch of salt

Toppings:

  • 1 banana, sliced and pan-fried in ghee with a pinch of cardamom
  • Crushed pistachios or almonds
  • A drizzle of honey
  • A few strands of saffron bloomed in warm milk (optional but stunning)

Method:

  1. Combine oats, chia seeds, milk, honey, cardamom, cinnamon, ginger, black pepper, and salt in a jar. Stir well.
  2. Cover and refrigerate overnight or for at least 6 hours.
  3. In the morning, stir the oats. Add a splash more milk if too thick.
  4. Pan-fry banana slices in a little ghee with a pinch of cardamom until golden and caramelised.
  5. Top oats with caramelised banana, crushed nuts, honey drizzle, and saffron milk if using.
  6. Eat cold or warm gently in the microwave for 60 seconds.
