A New Year Steeped in Tradition

Puthandu — the Tamil New Year — falls on April 14th each year, marking the first day of the Tamil month of Chithirai. It is a day of new beginnings, auspicious rituals, and above all, extraordinary food. Families wake early, arrange the kani — an auspicious display of fruits, flowers, gold, and a mirror — and then gather for a feast that celebrates life in all its complexity.

At Phoran, we celebrate Puthandu by honouring Tamil Nadu's vibrant spice culture. Explore our Ground Spices & Masala Blends for your festive kitchen.

The Philosophy of Mango Pachadi

The most iconic dish of Puthandu is Mango Pachadi — a unique preparation that deliberately combines six tastes in a single dish: sweet (jaggery), sour (raw mango), bitter (neem flowers), spicy (green chilli), salty, and astringent. This is not just a recipe — it is a philosophy. Life brings all flavours, and we must embrace them all.

The tempering for mango pachadi uses Whole Coriander Seeds, mustard seeds, and dried red chillies — a simple but powerful combination.

Puthandu Feast Essentials

The Tamil New Year feast is a celebration of the region's agricultural abundance:

  • Vada Curry — lentil fritters in a spiced onion-tomato gravy with Garam Masala
  • Sambar — the soul of Tamil cuisine, rich with tamarind, lentils, and aromatic spices
  • Rasam — a peppery, tangy broth made with Black Pepper (Kali Mirch) and tomatoes
  • Payasam — a sweet vermicelli or rice pudding fragrant with Green Cardamom

The Spices of Tamil Nadu

Tamil cuisine is defined by its masterful use of tempering — tadka — where whole spices are bloomed in oil to release their full flavour:
