The Masala Smash Burger Recipe
For the patties:
- 500g 80/20 minced beef or lamb (fat content is non-negotiable)
- 1.5 tsp buy Phoran Garam Masala online — our 17-spice iron-ground blend
- 1 tsp buy Phoran Coriander Powder online India
- 1/2 tsp buy Phoran Kashmiri Red Chilli Powder online India (for that deep red colour)
- 1 tsp salt
- Do NOT add onion or egg — keep it loose for smashing
For the masala sauce:
- 3 tbsp mayonnaise
- 1 tbsp green chutney
- 1 tsp buy Phoran Chaat Masala online India
- Squeeze of lime
Toppings:
- American cheese slices (melts best)
- Pickled red onions
- Fresh coriander
- Sliced green chillies (optional)
- Brioche buns, toasted in butter
The Smash Technique
- Divide mince into 80g balls. Do not overwork the meat.
- Heat a cast iron pan or tawa on maximum heat until smoking.
- Place a ball on the pan and immediately smash flat with a heavy spatula or burger press. Hold for 10 seconds.
- Season the top with a pinch of Phoran Garam Masala.
- Cook for 90 seconds until the edges are deeply caramelised and crispy.
- Flip, add cheese immediately, cook for 30 more seconds.
- Stack two patties per burger for maximum impact.
Building the Burger
Spread masala sauce on both bun halves. Add pickled onions to the base. Stack both patties. Top with fresh coriander and green chillies. Close the bun. Press down slightly. Eat immediately.
