The Masala Smash Burger Recipe

For the patties:

  • American cheese slices (melts best)
  • Pickled red onions
  • Fresh coriander
  • Sliced green chillies (optional)
  • Brioche buns, toasted in butter

The Smash Technique

  1. Divide mince into 80g balls. Do not overwork the meat.
  2. Heat a cast iron pan or tawa on maximum heat until smoking.
  3. Place a ball on the pan and immediately smash flat with a heavy spatula or burger press. Hold for 10 seconds.
  4. Season the top with a pinch of Phoran Garam Masala.
  5. Cook for 90 seconds until the edges are deeply caramelised and crispy.
  6. Flip, add cheese immediately, cook for 30 more seconds.
  7. Stack two patties per burger for maximum impact.

Building the Burger

Spread masala sauce on both bun halves. Add pickled onions to the base. Stack both patties. Top with fresh coriander and green chillies. Close the bun. Press down slightly. Eat immediately.
