The Chocolate Bar That Broke the Internet

The Dubai chocolate bar — dark chocolate, pistachio cream, kataifi pastry — became the most viral food item of 2024. Every food creator made a version. Every chocolate brand launched a knockoff. But the desi version? Nobody made it properly yet.

Phoran’s desi Dubai chocolate bar swaps kataifi for vermicelli, adds cardamom and rose to the pistachio filling, and finishes with a saffron-kissed chocolate shell. It’s the version that actually belongs in this part of the world.

The Phoran Desi Dubai Chocolate Bar Recipe

Ingredients (makes 6 bars):

For the shell:

  • 300g dark chocolate (70% cocoa), melted
  • A pinch of saffron bloomed in 1 tbsp warm cream

For the desi pistachio filling:

  • 150g unsalted pistachios, blended to a rough paste
  • 3 tbsp tahini or unsweetened peanut butter
  • 2 tbsp honey
  • 1/2 tsp buy Phoran Green Cardamom online India, freshly ground
  • 1 tsp rose water
  • Pinch of salt

For the crispy layer:

Method:

  1. Toast vermicelli in ghee with a pinch of cardamom until golden and fragrant. Cool completely.
  2. Mix pistachio paste with tahini, honey, ground cardamom, rose water, and salt until smooth and spreadable.
  3. Fold toasted vermicelli into the pistachio mixture.
  4. Stir saffron cream into melted chocolate.
  5. Pour a thin layer of saffron chocolate into bar moulds. Refrigerate for 10 minutes to set.
  6. Spoon pistachio-vermicelli filling into each mould. Press gently.
  7. Pour remaining chocolate over the top to seal. Tap to remove air bubbles.
  8. Refrigerate for at least 2 hours until fully set. Unmould and serve.

Why This Version Wins

Freshly ground Phoran Green Cardamom in both the filling and the crispy layer creates a layered aromatic experience — you taste it in the filling first, then again in the crunch. Rose water adds the floral note that makes this unmistakably desi. Saffron in the chocolate shell gives it a golden hue and a depth that plain dark chocolate can’t match.
