The Phoran Desi Pink Sauce Recipe
Ingredients:
- 1 cup thick yoghurt (hung curd works best)
- 3 roasted red chillies or 2 tsp buy Phoran Kashmiri Red Chilli Powder online India
- 1/2 tsp buy Phoran Coriander Powder online India
- 1/4 tsp buy Phoran Garam Masala online India
- 1 tsp buy Phoran Chaat Masala online India
- 2 cloves roasted garlic
- 1 tbsp olive oil or neutral oil
- Salt and a squeeze of lemon to taste
Method:
- Blend roasted chillies (or mix Kashmiri chilli powder directly) with roasted garlic and oil into a smooth paste.
- Whisk into the yoghurt until fully combined and smooth.
- Add coriander powder, garam masala, chaat masala, salt, and lemon juice.
- Taste and adjust — more chilli for heat, more chaat masala for tang, more lemon for brightness.
- Refrigerate for 30 minutes before serving — the flavours deepen as it rests.

This sauce is a workhorse. Use it as a dip for fries, a spread for wraps and sandwiches, a drizzle over grain bowls, a marinade for paneer or chicken tikka, or a sauce for pasta. It's the condiment your fridge has been missing.
