The Viral Smashed Cucumber Salad, Desi Edition — Jeeravan Masala Changes Everything

Smash It. Season It. Eat It.

The smashed cucumber salad — cucumbers bashed with a rolling pin, dressed with garlic, vinegar, sesame oil, and chilli — became one of the most-shared recipes of the last two years. The technique is the trick: smashing creates jagged edges that hold dressing better than any knife cut.

The desi version uses the same technique but builds the dressing entirely on Indian spices. No sesame oil. No soy. Just Phoran Jeeravan Masala, mustard oil, lime, and raw garlic. It’s sharper, more pungent, and completely addictive.

A Note from Our Founder

"Smashing vegetables before dressing them is something Indian cooks have always done — we smash ginger and garlic before tempering, we crush tomatoes by hand for curries, we bash raw onions for raita. The technique isn’t new. What’s new is applying it to cucumber and calling it a salad. We’ve been doing this at home for generations. Now it has a name." — Founder, Phoran Masala

The Phoran Smashed Cucumber Desi Recipe

Ingredients (serves 2):

Method:

  1. Wash cucumbers. Place on a chopping board and smash firmly with a rolling pin or the flat of a heavy knife until they crack and split. Don’t pulverise — you want jagged pieces, not mush.
  2. Tear or cut into rough 3–4cm pieces. Place in a colander, sprinkle with 1/2 tsp salt, and let drain for 10 minutes. This removes excess water and concentrates flavour.
  3. Pat dry with a kitchen towel. Transfer to a bowl.
  4. Mix Jeeravan Masala, Kashmiri chilli, grated garlic, mustard oil, lime juice, and black salt into a dressing.
  5. Pour over cucumbers and toss well. Let sit for 5 minutes — the jagged edges will absorb the dressing.
  6. Top with toasted mustard seeds, pomegranate seeds, fresh coriander, and sev.
  7. Serve immediately for maximum crunch.

Why Mustard Oil Makes the Difference

Mustard oil has a pungency that sesame oil can’t replicate — it’s sharp, slightly bitter, and deeply aromatic. Combined with raw garlic and Phoran Jeeravan Masala, it creates a dressing that’s bold enough to stand up to the water content of cucumber. The toasted mustard seeds on top add a nutty crunch that completes the dish.
