Whipped Coffee Gets a Masala Chai Twist — The Dalgona Upgrade Nobody Asked For But Everyone Needs

Dalgona Coffee Never Left. It Just Got Better.

Whipped coffee — dalgona — was the pandemic recipe that made everyone a home barista. Whipped instant coffee, sugar, hot water, poured over milk. Simple, photogenic, satisfying. But the masala chai version? It’s warmer, more complex, and infinitely more interesting.

Phoran’s masala chai whipped coffee layers the bold bitterness of whipped coffee with the aromatic warmth of cardamom, cinnamon, and ginger — all bloomed into the milk base. Two trends. One glass. Zero compromise.

A Note from Our Founder

"In India, we never had to choose between chai and coffee. We had both — sometimes in the same cup. Filter coffee with cardamom in the South, kahwa in Kashmir, masala chai everywhere else. The idea of combining whipped coffee with chai spices felt completely natural to me. It’s not fusion. It’s just Indian." — Founder, Phoran Masala

The Phoran Masala Chai Whipped Coffee Recipe

For the masala chai milk base:

For the whipped coffee:

Method:

  1. Simmer milk with cardamom pods, cinnamon, and ginger for 5 minutes on low heat. Strain and sweeten. Cool to room temperature or serve warm.
  2. Whip instant coffee, sugar, and hot water together using a hand whisk or electric beater for 3–5 minutes until thick, glossy, and pale brown.
  3. Fold a pinch of freshly ground cardamom into the whipped coffee.
  4. Pour spiced milk into a glass over ice (for iced version) or keep warm.
  5. Spoon whipped coffee on top in a generous cloud.
  6. Dust with a pinch of cinnamon or cardamom to finish.
  7. Stir before drinking to combine the layers.

Iced vs Hot

The iced version is the content creator’s choice — the contrast between the dark whipped coffee cloud and the pale spiced milk is visually stunning. The hot version is what you make on a cold morning when you need both caffeine and comfort in one cup.

Why the Cardamom Makes the Difference

Freshly ground Phoran Green Cardamom in both the milk and the whipped coffee creates a layered aromatic experience. The spice in the milk is subtle and warming. The pinch in the whipped coffee is bright and immediate. Together they make the drink taste like it was made by someone who knows what they’re doing.
