In the first year of building Phoran, a supplier offered us turmeric at nearly half the price we were paying.

Same colour. Similar smell. Passed a basic visual check.

We said no.

Not because we didn't need to manage costs — every small business does. We said no because we knew what that price meant. It meant a different origin. A different curcumin content. A different harvest. And ultimately, a different product in your kitchen.

That decision defined what Phoran would become.

Why Sourcing Is the Most Important Decision in Spice Making

Most consumers think of spice quality as a processing issue — how it's cleaned, ground, or packaged. In reality, quality is determined almost entirely at the farm level, before any processing begins.

The same spice grown in two different regions can taste dramatically different. Turmeric from Erode (Tamil Nadu) has a higher curcumin content and a more complex, earthy flavour than commodity turmeric sourced from lower-quality growing regions. Wayanad pepper has a heat profile and aromatic depth that generic black pepper simply cannot replicate.

How We Source

Direct farm relationships: Wherever possible, we work directly with farmers or small cooperatives. This removes middlemen, ensures traceability, and allows us to pay fair prices.

Seasonal sourcing: We buy after harvest, not on a rolling commodity basis. This means our stock is always from the most recent crop — not sitting in a warehouse for 18 months.

At-origin selection: We visit farms and select based on the quality and integrity of the produce — not on price.

Small-batch production: We produce in small quantities to ensure nothing sits on a shelf too long. Freshness is non-negotiable.

When you open a jar of Phoran Masala, you are getting spices at peak flavour, from a traceable origin, made without the cost-cutting that defines most commercial masalas.

It costs us more. It costs you a little more. And it tastes entirely different.

We have been approached multiple times by distributors and retailers asking us to reduce our price point by reformulating — using cheaper base ingredients or extending blends with fillers.

Every time, the answer has been the same: no.

Phoran exists because the market already has plenty of cheap masala. It doesn't need another one.
