Coriander Powder (Dhaniya) — Iron-Pounded, Small-Batch
Coriander powder is the single most-used ground spice in Indian cooking — added in quantity to almost every curry, dal, and sabzi as the primary flavour base. Phoran's dhaniya powder is roasted from whole seeds and iron-pounded in small batches to capture the bright, citrusy, slightly floral notes that disappear quickly in mass-produced machine-ground powder.
How to Use Coriander Powder
- Curry base: Add 1–2 tsp after onions and tomatoes cook down, alongside cumin powder. Cook for 1–2 minutes in oil before adding liquid or meat.
- Dal: Stir ½–1 tsp into dal while cooking for an aromatic, well-rounded flavour
- Sambhar: A core ingredient in sambhar powder blends and in the cooking liquid itself
- Marinades: Combine with cumin, turmeric, chilli, and yoghurt for chicken, fish, or paneer marinades
- Dry sabzi: Sprinkle ½ tsp into stir-fried vegetables mid-cook
- Chutneys: Add a pinch to tomato or coconut chutney for depth
The Classic Dhania-Jeera Ratio
The foundational Indian spice ratio is 2 parts coriander powder to 1 part cumin powder. This combination appears in almost every regional Indian cuisine and forms the base of most commercial curry powders. When in doubt about how much to use in a dish, start with 1 tsp coriander + ½ tsp cumin per serving and adjust from there.
How Long Does Coriander Powder Stay Fresh?
Ground coriander loses its citrusy volatile oils faster than most other spices — within 6 months of grinding if stored carelessly. Keep in an airtight container away from heat and light. If your powder smells flat or dusty rather than citrusy, it has lost its potency and should be replaced.
