What Does Ajwain Taste Like?

Raw ajwain is sharp, slightly bitter, and intensely aromatic — similar to thyme but more pungent. When cooked in hot oil or kneaded into dough and cooked, the harshness mellows into a warm, savoury, herbaceous flavour. Use sparingly — too much makes food medicinal.
