Black pepper gets the "King" title for historical trade dominance. Cardamom earns "Queen" for something harder to quantify: its complexity. A single green cardamom pod contains a volatile oil profile that spans floral, citrus, camphor, and mint — all at once.

It's the most expensive spice in India after saffron and vanilla, and it's worth every rupee when used correctly. The key word: correctly. Cardamom is easy to overuse and harder to balance than most spices.

A Note on Sourcing

The best green cardamom comes from Coorg and Idukki in Kerala — small pods with wrinkled green skin and intensely fragrant black seeds inside. If the seeds are pale or odourless, the cardamom is old. Always buy whole pods and grind or crush just before use.

10 Green Cardamom Recipes

1. Masala Chai

Prep: 2 mins | Cook: 8 mins | Serves: 2

  • 2 cups water, 1 cup whole milk
  • 2 tsp strong black tea (Assam)
  • 3 green cardamom pods, lightly crushed
  • 1 small piece ginger, crushed
  • 2 tsp sugar

Simmer water with cardamom and ginger for 3 mins. Add tea, simmer 2 mins. Add milk, bring to boil. Strain and serve.


2. Elaichi Kheer (Rice Pudding)

Prep: 5 mins | Cook: 45 mins | Serves: 4

  • 1L full-fat milk
  • 3 tbsp basmati rice, washed
  • 4 tbsp sugar
  • 4 green cardamom pods, seeds ground
  • 8–10 saffron strands (optional)
  • 2 tbsp chopped pistachios

Simmer milk on low heat, stirring frequently, until reduced by one-third (30 mins). Add rice, cook until completely soft (15 mins). Add sugar, cardamom powder, saffron. Garnish with pistachios. Serve warm or chilled.


3. Cardamom Butter Cookies (Elaichi Nankhatai)

Prep: 15 mins | Bake: 15 mins | Makes: 20

  • 200g maida (plain flour)
  • 100g ghee or unsalted butter
  • 80g icing sugar
  • 1 tsp green cardamom powder (from ∼6 pods)
  • Pinch of salt

Mix ghee and sugar until pale. Add flour, cardamom, salt. Knead lightly into a soft dough. Shape into balls, flatten slightly. Bake at 170°C for 14–16 mins until just golden at edges. Cool completely before storing.


4. Shahi Tukda (Royal Bread Pudding)

Prep: 10 mins | Cook: 20 mins | Serves: 4

  • 4 slices white bread, crusts removed, halved diagonally
  • Ghee for frying
  • 500ml full-fat milk, reduced to 300ml rabri
  • 3 tbsp sugar
  • 4 cardamom pods, ground
  • Rose water, saffron, pistachios to garnish

Fry bread in ghee until golden. Make rabri: reduce milk with sugar and cardamom, stirring constantly. Pour rabri over fried bread. Garnish and serve warm.


5. Cardamom Lassi

Prep: 5 mins | Serves: 2

  • 400ml full-fat yoghurt
  • 200ml cold water
  • 2 tbsp sugar
  • 4 cardamom pods, seeds ground
  • Pinch of saffron dissolved in 1 tbsp warm milk

Blend all ingredients until frothy. Serve over ice. Adjust sweetness to taste.


6. Phirni (Ground Rice Pudding)

Prep: 2 hrs (soaking) | Cook: 25 mins | Serves: 4

  • 1L full-fat milk
  • 4 tbsp raw rice, soaked 2 hrs, coarsely ground
  • 5 tbsp sugar
  • 5 cardamom pods, ground
  • Rose water and pistachios to garnish

Bring milk to boil. Add ground rice paste (mixed with a little cold milk). Stir constantly on medium-low for 15–18 mins until thick. Add sugar and cardamom. Pour into clay bowls (matka). Chill 2 hrs. Garnish and serve.


7. Cardamom Chicken Marinade

Prep: 10 mins + 2 hrs marination | Serves: 4

  • 500g chicken (bone-in pieces)
  • 150ml yoghurt
  • 1 tsp cardamom powder (from 8 pods)
  • 1 tsp ginger paste, 1 tsp garlic paste
  • 1 tsp white pepper
  • Salt to taste
  • 1 tbsp oil

Mix all marinade ingredients. Coat chicken thoroughly. Marinate minimum 2 hours (overnight is better). Grill, tandoor, or pan-sear. The cardamom gives a delicate floral note that works particularly well with white meats.


8. Cardamom-Scented Basmati Rice

Prep: 30 mins soaking | Cook: 15 mins | Serves: 4

  • 300g basmati rice, soaked 30 mins
  • 2 tbsp ghee
  • 4 green cardamom pods
  • 2 cloves
  • 1 bay leaf
  • Salt to taste
  • 550ml water

Heat ghee. Add whole spices — they'll bloom in 30 seconds. Add drained rice, stir to coat. Add water and salt. Bring to boil, cover tight, cook on lowest heat for 12 mins. Rest 5 mins before opening.


9. Gulab Jamun Syrup with Cardamom

Makes syrup for 20 gulab jamuns

  • 300g sugar
  • 300ml water

  • 1 tsp rose water
  • Few saffron strands

Dissolve sugar in water. Add cardamom and saffron. Simmer 5 mins (no stirring). Add rose water off heat. Keep warm for soaking jamuns.


10. Elaichi Milk (Bedtime Golden Milk Variation)

Prep: 2 mins | Cook: 5 mins | Serves: 1

  • 250ml whole milk
  • 3 cardamom pods, crushed
  • Pinch of turmeric
  • 1 tsp honey
  • Pinch of black pepper

Simmer milk with cardamom for 4 mins. Strain. Add turmeric, honey, pepper. Drink warm. Cardamom aids digestion; this is a lighter alternative to haldi doodh.
