Classic Besan Ladoo with a Spicy Twist
Besan ladoo is a beloved Indian sweet made from roasted gram flour, ghee, and sugar. Adding a hint of chai masala gives these traditional ladoos a unique, aromatic flavor that's perfect for Diwali!

Ingredients
- 2 cups besan (gram flour)
- 3/4 cup ghee
- 1 cup powdered sugar
- 1 tsp Phoran Chai Masala
- 1/4 cup chopped cashews and almonds
- 2 tbsp raisins
- 1/4 tsp nutmeg powder
Instructions
Step 1: Roast the Besan
Heat ghee in a heavy-bottomed pan on low-medium flame. Add besan and roast continuously for 15-20 minutes until it turns golden brown and releases a nutty aroma. This is the most important step!
Step 2: Add Dry Fruits
Add chopped nuts and raisins to the roasted besan. Mix well and roast for another 2 minutes.
Step 3: Cool and Mix
Turn off the heat and let the mixture cool for 10 minutes. Add powdered sugar, Phoran Chai Masala, and nutmeg powder. Mix thoroughly.
Step 4: Shape the Ladoos
While the mixture is still warm (not hot), take small portions and shape into round ladoos. If the mixture is too crumbly, add 1-2 tsp of warm ghee.
Step 5: Set and Store
Let the ladoos cool completely. Store in an airtight container for up to 2 weeks.
Chef's Tips
- Roast besan on low flame to avoid burning - patience is key!
- The Phoran Chai Masala adds warmth with hints of cardamom, cinnamon, and ginger
- Don't add sugar while the besan is hot or it will melt
- Use fresh ghee for the best flavor
Variations
Try adding a pinch of Phoran Green Cardamom powder for extra aroma, or roll the ladoos in desiccated coconut for a different texture!
