Cloud Eggs: The Breakfast That Broke Instagram

The Phoran Masala Cloud Eggs Recipe
Ingredients (serves 2):
- 4 eggs, whites and yolks separated
- 1/2 tsp buy Phoran Garam Masala online India
- 1/2 tsp buy Phoran Kashmiri Red Chilli Powder online India
- 2 tbsp fresh coriander, finely chopped
- 1 green chilli, finely chopped (optional)
- 2 tbsp grated cheese (cheddar or processed)
- Salt to taste
- Butter for the tray
To serve:
- Toasted sourdough or buttered paratha
- A dusting of buy Phoran Jeeravan Masala online India for finishing
- Extra fresh coriander
Method:
- Preheat oven to 230°C. Line a baking tray with parchment and butter lightly.
- Whip egg whites with a pinch of salt until stiff peaks form — they should hold their shape when you lift the whisk.
- Gently fold in garam masala, Kashmiri chilli, fresh coriander, green chilli, and cheese. Do not overmix — keep the whites fluffy.
- Spoon into 4 cloud mounds on the tray. Make a well in the centre of each with the back of a spoon.
- Bake for 3 minutes until the whites are just set and lightly golden.
- Carefully slide one yolk into each well. Season yolks with a pinch of salt.
- Bake for another 3 minutes for a runny yolk, 4–5 minutes for set.
- Dust with Phoran Jeeravan Masala and extra coriander. Serve immediately on toast or paratha.
