Not every Diwali dish needs hours of preparation. Between the diyas, the guests, and the sweets that are already done, you need a few recipes that come together fast without compromising on flavour.
Here are 8 festive dishes that are genuinely ready in 30 minutes or less — all made with Phoran Masala spices. Keep these in your back pocket for when the clock is running.

⏱️ The 30-Minute Diwali Menu
1. Pav Bhaji — 25 minutes
Mumbai's most beloved street food. Everything is mashed together in one pan — fast, forgiving, and always a crowd-pleaser.
Ingredients:
- 3 potatoes + 1 cup mixed veg (peas, cauliflower), boiled and mashed
- 2 onions, 3 tomatoes, 1 capsicum — all finely chopped
- 2 tsp Phoran Pav Bhaji Masala
- 3 tbsp butter, salt, lemon juice, fresh coriander
- 6 pav (bread rolls), toasted in butter
Method: Heat butter in a wide pan. Sauté onions 5 minutes until golden. Add capsicum and tomatoes, cook until mushy (8 minutes). Add pav bhaji masala, stir 1 minute. Add mashed vegetables, mix vigorously, mashing everything together. Add ½ cup water. Cook on medium-high for 10 minutes, stirring and mashing constantly until thick and glossy. Finish with butter, lemon juice, and coriander. Serve with toasted pav and sliced raw onion.
2. Chole (Chickpea Curry) — 20 minutes (using canned chickpeas)
Use canned or pre-cooked chickpeas and this is a 20-minute curry with real depth.
Ingredients:
- 2 cans (800g) chickpeas, drained and rinsed
- 2 onions finely chopped, 3 tomatoes pureed
- 1 tsp ginger-garlic paste
- 2 tsp Phoran Chole Masala
- 1 tsp Phoran Garam Masala
- 3 tbsp oil, salt, lemon juice, coriander
Method: Heat oil, cook onions until golden (8 minutes). Add ginger-garlic paste, cook 1 minute. Add tomato puree, chole masala, garam masala — cook until oil separates (5 minutes). Add chickpeas and ½ cup water. Simmer 10 minutes. Mash a few chickpeas for body. Finish with lemon juice and coriander.
3. Paneer Bhurji — 15 minutes
Scrambled spiced paneer — fast, protein-rich, and works as a sabzi or stuffing for puri.
Ingredients:
- 300g paneer, crumbled
- 1 onion finely chopped, 2 tomatoes finely chopped, 1 capsicum finely chopped
- 1 tsp ginger-garlic paste
- 1 tsp Phoran Garam Masala
- ½ tsp turmeric, ½ tsp red chilli powder
- 2 tbsp oil, salt, fresh coriander
Method: Heat oil. Add onions, cook 4 minutes. Add ginger-garlic paste, cook 1 minute. Add tomatoes and capsicum, cook 4 minutes until soft. Add turmeric, chilli, garam masala — stir 30 seconds. Add crumbled paneer, mix well. Cook 3 minutes. Finish with coriander. Serve with roti, puri, or as a filling.
4. Aloo Jeera (Cumin Potatoes) — 20 minutes
The most underrated Diwali side dish. Simple, fragrant, and goes with everything.
Ingredients:
- 4 medium potatoes, boiled and cubed (boil ahead or use leftover boiled potatoes)
- 1½ tsp Phoran Premium Jeera
- ½ tsp turmeric, ½ tsp red chilli powder
- 1 tsp Phoran Jeeravan Chaat Masala
- 2 tbsp oil, salt, fresh coriander
Method: Heat oil until hot. Add jeera — let it splutter and turn slightly dark (30 seconds). Add potato cubes, turmeric, chilli, salt. Toss on high heat for 7–8 minutes until lightly golden. Finish with chaat masala and coriander.
5. Masala Peanuts — 15 minutes
The easiest Diwali snack. Coat, fry, done.
Ingredients:
- 2 cups raw peanuts
- ½ cup besan, 1 tsp Phoran Garam Masala, 1 tsp Kashmiri red chilli powder, ½ tsp Phoran Jeeravan Chaat Masala, salt
- Water to coat, oil to fry
Method: Mix besan and spices. Add water to make a thick batter. Toss peanuts in batter. Deep fry in batches on medium heat 3–4 minutes until golden. Cool completely — they crisp further as they cool. Keeps 2 weeks in a tin.
6. Dal Tadka — 25 minutes (pressure cooker)
With a pressure cooker, dal tadka goes from dry lentils to the table in under 30 minutes.
Ingredients:
- 1 cup masoor dal (red lentils — fastest cooking)
- 1 tsp Phoran Turmeric, salt
- Tadka: 2 tbsp oil or ghee, 1 tsp Phoran Jeera, 2 dried red chillies, 1 onion finely chopped, 2 tomatoes chopped, 1 tsp Phoran Garam Masala
Method: Pressure cook dal with turmeric, salt, and 2.5 cups water for 3 whistles. Meanwhile heat oil/ghee until very hot — add jeera and chillies (they should splutter instantly). Add onions, cook 5 minutes until golden. Add tomatoes and garam masala, cook 4 minutes. Pour over the cooked dal. Stir and simmer 5 minutes. Serve with rice or roti.
7. Bread Pakora — 15 minutes
A Diwali tea-time snack that uses pantry staples and is ready in minutes.
Ingredients:
- 6 slices white bread, crusts removed, each cut into 2 triangles
- Batter: 1 cup besan, ½ tsp turmeric, ½ tsp red chilli powder, ½ tsp Phoran Garam Masala, salt, water to make a thick coating batter
- Oil for deep frying
- Optional filling: Mashed spiced potato mixed with Jeeravan Chaat Masala
Method: Make a thick besan batter. If using filling, sandwich potato mixture between two bread slices before cutting. Dip bread triangles in batter, coating all sides. Deep fry on medium heat until golden and crisp — 2–3 minutes per side. Drain on paper. Serve hot with green chutney and chaat masala sprinkled on top.
8. Chaat Platter — 10 minutes (assembly only)
No cooking required — the fastest festive crowd-pleaser.
What you need:
- Papdi or puri (store-bought)
- Boiled chickpeas or potato cubes
- Whisked yogurt
- Tamarind chutney and green chutney
- Phoran Jeeravan Chaat Masala — the essential finishing spice
- Sev (thin fried chickpea noodles), pomegranate seeds
Method: Arrange papdi on a platter. Top with chickpeas or potato. Spoon yogurt generously. Drizzle both chutneys. Sprinkle chaat masala liberally. Top with sev and pomegranate. Serve immediately. The whole thing takes 10 minutes and looks spectacular.

- Day before: Boil potatoes for aloo jeera and bread pakora filling. Make masala peanuts and store in a tin.
- Diwali day: Make chole, dal tadka, and pav bhaji sequentially — each can rest while you make the next.
- Just before guests arrive: Assemble chaat platter, fry bread pakora, finish paneer bhurji.
