Panch Phoran — The Soul of Bengali Cooking
Panch Phoran (also spelled Panch Phoron) is the defining spice blend of Bengali cuisine — a whole-spice mixture of five seeds tempered in mustard oil that forms the aromatic foundation of dals, vegetables, and fish curries across West Bengal, Odisha, and Bangladesh. Phoran takes its name from this blend, which is what we were built around.
What Are the Six Spices in Panch Phoran?
- Methi (Fenugreek): Slightly bitter, adds depth and body
- Kalonji (Nigella/Onion seeds): Peppery, slightly smoky, distinctive aroma
- Jeera (Cumin): Earthy and warm, the anchor of the blend
- Rai (Black Mustard): Sharp and pungent, crackles quickly in oil
- Saunf (Fennel): Sweet and anise-like, balances the sharper seeds
- Ajwain : Pungent and thyme-like, adds a bold savoury note to parathas, pakoras, and tempering.
Our blend follows the traditional Bengali ratio — equal parts of all five, as used in authentic home cooking across Bengal.
How to Use Panch Phoran
- Heat mustard oil until smoking, reduce to medium, add Panch Phoran
- Wait 10–15 seconds until seeds crackle and mustard seeds pop
- Add your vegetables, dal, or fish immediately
- Classic uses: Aloo posto, begun bhaja, cholar dal, macher jhol, labra (mixed vegetable curry)
- Pickle base: Add to hot oil for Bengali-style achaars
Can I Use Panch Phoran in Non-Bengali Cooking?
Yes. Panch Phoran works beautifully in Odia, Bihari, and Bangladeshi cooking where it is equally traditional. Outside these cuisines, it can be used to temper any dal, roasted vegetables, or lentil soups for a distinctly aromatic, complex flavour that is unlike any single-spice tadka.
Why Whole Spices, Not Powder?
Panch Phoran is always used whole — never ground. The seeds need to crackle in hot oil to release their essential oils. Ground Panch Phoran powder would burn immediately and lose its layered flavour release. Our blend is 100% whole seeds, no powder mixed in.
Storage: Airtight container, away from heat and moisture. Whole blend retains aroma for 2 years. Origin: India.
