Turmeric Powder (Haldi) — Stone-Ground, Small-Batch

Turmeric is the spice that gives Indian cooking its golden colour and earthy, slightly bitter warmth. It appears in almost every curry, dal, and rice dish — not as a featured flavour but as a foundational one that ties everything together. Phoran's haldi is stone-ground in small batches from whole turmeric roots for vibrant colour and genuine aroma.

How to Use Turmeric Powder

  • Curry and dal base: Add ½ tsp after onion-tomato base cooks down, before liquid is added — cook briefly in oil to bloom the colour
  • Rice and biryani: Add a pinch to the cooking water for golden, aromatic rice
  • Marinades: Combine with chilli, ginger-garlic, and yoghurt for chicken, fish, or paneer
  • Sabzi: Sprinkle ¼ tsp over vegetables mid-cook for colour and depth
  • Pickles (achaar): An essential ingredient in most Indian pickles
  • Haldi doodh: Stir ¼ tsp into warm milk with a pinch of black pepper and honey

How Much Turmeric to Use?

Turmeric is used for colour and earthy depth, not as a primary flavour. ½ tsp is enough for a curry serving 4. More than 1 tsp in a single dish will make it bitter and medicinal. Most Indian recipes use between ¼ and ½ tsp regardless of serving size.

Why Stone-Ground Makes a Difference

Stone-grinding generates less heat than blade grinding, preserving the curcuminoid pigments that give turmeric its vivid golden colour. Commercially machine-ground turmeric often appears duller and paler because of heat damage during processing. Phoran's small-batch approach means the colour and aroma are as fresh as possible from the point of grinding.
