Diwali Biryani Recipes: Chicken, Vegetable & Mutton Dum Biryani Guide

Biryani is the undisputed showstopper of the Diwali table. When the pot is unsealed and the steam rises, the whole room goes quiet. Getting it right is about technique as much as spices — and the right masala makes all the difference.
Here are three complete dum biryani recipes for Diwali — chicken, vegetable, and mutton — all built around Phoran Biryani Masala, freshly stone-ground in small batches.

What Makes a Good Dum Biryani?
Three things separate great biryani from average biryani:
- The marinade: Enough time (minimum 4 hours, overnight is better) and enough spice to penetrate the protein or vegetables
- The rice: Parboiled to exactly 70–75% — it finishes cooking on dum and absorbs the flavours from below
- The dum: A sealed pot on low heat that traps steam and forces the layers to meld. This cannot be skipped or rushed.
🍗 Recipe 1: Chicken Dum Biryani
The classic — serves 6.
Marinade Ingredients:
- 1 kg chicken, skinless, cut into large pieces
- 1 cup thick yogurt
- 2 tsp Phoran Biryani Masala
- 1 tsp Phoran Garam Masala
- 1 tsp Phoran Chicken Masala
- 1 tsp Kashmiri red chilli powder (colour, not heat)
- 2 tsp ginger-garlic paste
- Juice of 1 lemon, salt to taste
- 3 tbsp oil
Rice Ingredients:
- 3 cups basmati rice, soaked 30 mins
- Whole spices: 2 bay leaves, 4 green cardamom, 4 cloves, 1-inch cinnamon, 1 star anise
- Salt, water to parboil
Layering:
- 3 large onions, thinly sliced and deep fried until golden (birista) — this is non-negotiable
- A generous pinch of saffron soaked in ¼ cup warm milk
- Handful each of fresh mint and coriander leaves
- 4 tbsp ghee
- Slivered almonds and cashews, lightly fried in ghee
Method:
- Mix all marinade ingredients with chicken. Cover and refrigerate for minimum 4 hours or overnight.
- Bring a large pot of salted water to boil with whole spices. Add soaked rice and parboil for exactly 6 minutes — the rice should be 70% cooked (bend one grain — it should still have a white core). Drain immediately.
- Heat oil in a heavy-bottomed pot. Cook marinated chicken on medium-high heat for 8–10 minutes until 80% done. Spread evenly in the pot.
- Layer half the parboiled rice over the chicken. Add half the birista, saffron milk, mint, coriander, and ghee. Add remaining rice. Top with remaining birista, herbs, ghee, and the fried nuts.
- Seal the pot tightly: first a layer of foil pressed around the rim, then the lid on top. Place on high heat for 3 minutes. Then reduce to the absolute lowest heat for 25 minutes.
- Rest sealed for 10 minutes. Open and gently mix from the bottom before serving. Serve with raita and a lemon wedge.
Tip: The birista (fried onions) are what give biryani its signature sweetness and colour. Take the time to fry them properly — deep golden, not burnt.
🌱 Recipe 2: Vegetable Dum Biryani
As layered and aromatic as the meat version — serves 6.
Vegetable Marinade:
- 3 cups mixed vegetables: potato cubes, carrots, peas, French beans, cauliflower florets
- 1 cup thick yogurt (use coconut yogurt for vegan)
- 2 tsp Phoran Biryani Masala
- 1 tsp Phoran Garam Masala
- 1 tsp ginger-garlic paste
- Salt, juice of half a lemon
Method: Marinate vegetables for 1 hour. Parboil basmati rice as above. Sauté marinated vegetables in a heavy pot for 10 minutes until partially cooked. Layer with parboiled rice, birista, saffron, mint, coriander, and ghee (or oil for vegan). Seal and cook on dum for 20 minutes on lowest heat. Rest 10 minutes before opening.
Tip: Don’t overcook vegetables before layering — they will continue to cook on dum and mushy vegetables ruin the texture.
🥤 Recipe 3: Mutton Dum Biryani
The most indulgent version — worth the extra time. Serves 6–8.
Marinade:
- 1 kg bone-in mutton pieces, cleaned
- 1 cup thick yogurt
- 2 tsp Phoran Biryani Masala
- 1½ tsp Phoran Garam Masala
- 2 tsp ginger-garlic paste
- 1 tsp Kashmiri red chilli powder
- Juice of 1 lemon, 4 tbsp oil, salt
- Marinate overnight — mutton needs more time than chicken
Method: Mutton takes longer to cook than chicken. After marinating, cook the mutton in a pressure cooker for 3 whistles (or in a covered pot for 45–60 minutes) before assembling the biryani — it should be 80% done. Then layer with parboiled rice, birista, saffron, mint, coriander, and ghee exactly as for chicken biryani. Seal and cook on dum for 30 minutes on lowest heat. Rest 15 minutes before opening.
Tip: Reserve the mutton cooking liquid and add a few tablespoons to the bottom of the pot before layering — it adds depth and prevents the bottom layer from drying out.
