Green cardamom is called the Queen of Spices for good reason — its sweet, floral, eucalyptus-like aroma is one of the most complex and versatile in the spice world, equally at home in a cup of masala chai, a pot of biryani, or a bowl of kheer. Phoran sources bold-grade cardamom (8mm+ pods) with plump, oil-rich seeds that deliver far more aroma than smaller-grade pods.

Bold Grade vs Regular Grade — What’s the Difference?

Bold grade cardamom (8mm+) has larger pods with more seeds and higher essential oil content. Regular or small-grade pods have fewer seeds and a milder aroma. For chai and biryani where cardamom is a featured flavour, bold grade makes a noticeable difference. For recipes using large quantities (e.g. grinding garam masala in bulk), regular grade works fine.

How to Use Green Cardamom

  • Masala chai: Lightly crush 1–2 pods, add to boiling water with tea leaves
  • Biryani: Add 3–4 whole pods to hot ghee in the first tempering
  • Kheer and payasam: Add 2–3 crushed pods while the milk simmers, remove before serving
  • Korma and shahi curries: Whole pods in the initial tempering add floral warmth
  • Garam masala: Grind seeds (not pods) when making fresh blends
  • Baking: Ground cardamom in cookies, cakes, and bread — pairs especially well with orange and chocolate

Whole Pods vs Ground Cardamom — Which to Use?

Whole pods are best for tempering, biryani, and chai — they release aroma slowly and can be removed before serving. Ground cardamom (seeds only, not pods) is used in baking, sweets, and spice blends where fine distribution is needed. Grind seeds fresh just before use for maximum flavour — pre-ground cardamom loses its volatile oils within weeks.
